Mike's Chilli Meatloaf

    I love meatloaf!! All the usual chilli con carne ingredients combine in an easy family main. This is my 2nd meatloaf recipe hope you like the variation . . .

    Makes: 4 good sized portioned

    • 300g - 450g minced beef
    • 1 clove garlic, crushed or chopped finely
    • 1 small onion, finely chopped
    • 1 egg, beaten
    • 1 tsp ground cumin
    • 1/2 tsp chilli powder
    • 1 tsp beef stock powder
    • 1/2 tsp paprika
    • 1/2 tsp garam masala
    • 1/2 cup tomato sauce
    • 1 tin red kidney beans, drained & rinsed
    • 1/2 cup breadcrumbs

    Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

    1. Combine all ingredients in a bowl and mix thoroughly. Hint leave the breadcrumbs till last!
    2. Pack mixture into a loaf tin and bake @ 180C in a preheated oven for one hour
    3. Allow to rest for a few minutes, serve and enjoy!!

    This meatloaf was ok for us. For some reason it turned out a bit dry and crumbly. It was difficult to cut it in slices. The taste was good, though. I believe more chili powder would give it an extra oomph. A nice alternative.  -  01 Jun 2013
