Tomato and mince base, with grillled eggplant, topped with a grated vege quiche top. Packed full of veges and hearty. You can use regular tomato sauce but the pasta sauce is nicer.
You can stagger the method if you like. I fry the onion, ginger and garlic while i make the vege mix. Also while the eggplant is baking i simmer the mince mixture.
