Eggplant lasagna quiche

Tomato and mince base, with grillled eggplant, topped with a grated vege quiche top. Packed full of veges and hearty. You can use regular tomato sauce but the pasta sauce is nicer.

Serves: 4 

  • a quarter of a pumpkin
  • 2 carrots
  • 3 or 2 eggs
  • 1 onion
  • 3 cloves garlic
  • domino sized chunk ginger
  • 1 tomato
  • 1 can tomato based sauce/pasta sauce
  • 1 good sized eggplant
  • sprinkle moroccan seasoning
  • 250 grams mince
  • 1/4 cup milk
  • 1 cup cheese/mild (grated)
  • 1 teaspoon salt
  • 1 Tablespoon oil
  • 1/2 cup peas
  • 1/2 cup - cup bread crumbs (as needed)
  • 1 teaspoon rosemary

  1. Grate the pumpkin and the carrots into a large bowl. Add the eggs and milk, then whisk until all mixture is blended in together. Add rosemary give an additional stir then set aside.
  2. Chop up the garlic, onion and ginger and put into the pan with the oil, fry gently until the onion is clear.
  3. Add the mince and brown. Once the mince is brown add the salt, tomato diced up, and the peas and stir around.
  4. Add the can of tomato pasta sauce and simmer for about 5 mins then set aside. Preheat oven to 180 degrees C (fan forced).
  5. Cut up the eggplant into 1 cm slices, you should end up with about 10. Sprinkle the Morrocan seasoning over the top side of the eggplant. Place the slices into the oven
  6. Fan bake the eggplant in the oven for 10 mins or until the eggplant is soft. reduce the oven heat to 150 degrees C.
  7. Grease a baking dish and put the mince mixture in the bottom of the dish
  8. Next lay the eggplant in a layer over the mince then put all the cheese over the eggplant evenly.
  9. Over the cheese spoon over the grated vege/egg mixture. Dont worry if there is excess moisture in the bottom of the grated mixture bowl just spread it evenly over the top
  10. Coat the top of the grated vege mix with bread crumbs
  11. Put into the oven and bake at 150 for half and hour, then eat.


You can stagger the method if you like. I fry the onion, ginger and garlic while i make the vege mix. Also while the eggplant is baking i simmer the mince mixture.
