Breakfast Bran Loaf

    This is one of my mum's old off-the-back of a cereal packet recipes (from the 80's)! I've been making it for over 15yrs and everyone who has it wants the recipe. The nicest thing is you can always remember the recipe as it is so easy, as well as change it to suit. I do a date and walnut, apricot and walnut and also love throwing in some linseed. Any dried fruit and nut combo will work.

    Ingredients
    Makes: 10 Slices

    • 1 cup All Bran
    • 1 cup milk
    • 1 cup sugar (white or I prefer demerera)
    • 1 cup self raising flour
    • 1 cup mixed nuts and fruit (I usually put in a bit extra)

    Directions
    Preparation:30min  ›  Cook:55min  ›  Ready in:1hour25min 

    1. Soak All Bran and milk for about an hour until mushy.
    2. Add flour and sugar to milk and All Bran mixture and stir till combined.
    3. Finally, add mixed fruit and nuts ........try some linseed too!
    4. Bake for 55 minutes.

    Tip

    It lasts all week and can be toasted and frozen. Over baking is better as it isn't good when it is gluggy. So bake till you get a nice crack in the top. Use a greased loaf tin.
