This is one of my mum's old off-the-back of a cereal packet recipes (from the 80's)! I've been making it for over 15yrs and everyone who has it wants the recipe. The nicest thing is you can always remember the recipe as it is so easy, as well as change it to suit. I do a date and walnut, apricot and walnut and also love throwing in some linseed. Any dried fruit and nut combo will work.
It lasts all week and can be toasted and frozen. Over baking is better as it isn't good when it is gluggy. So bake till you get a nice crack in the top. Use a greased loaf tin.
