Spinach & Feta Slice

    Great side dish at a BBQ or perfect for lunch with salad.

    Serves: 8 

    • 8 spinach leaves
    • 1 onion
    • 250g feta cheese
    • 125g cheddar cheese (light)
    • 1/4 tspn pepper
    • 30g butter
    • 5 eggs
    • 6 sheets packaged filo pasty

    1. Preheat oven to 180 degrees C. Cut white stalks off spinach, roll up leaves then shred finely, place into a large mixing bowl.
    2. Crumble feta into mixing bowl. Add grated cheddar cheese, diced onion and pepper to mixing bowl.
    3. Toss all ingredients until well mixed.
    4. Melt butter in microwave.
    5. Lightly grease base of a large rectangular baking dish. Line the base of the baking dish with 3 layers of filo pastry, lightly greasing each sheet with melted butter.
    6. Place spinach and feta mixture into the baking dish. Press firmly and evenly over the filo pastry.
    7. Beat eggs and pour over the spinach mixture.
    8. Layer 3 sheets of filo pastry over spinach mixture, lightly greasing each sheet with melted butter.
    9. Bake in moderate oven for 45 minutes or until light golden brown.


    Over greasing the sheets of filo pasty will make it too oily.
