Rice Pilaf

This makes a tasty rice side dish for curries or Moroccan dishes. Rice simmered in spices with lemon zest and coriander to serve. Enjoy!

Serves: 4 

  • 1 cup (150g) basmati rice
  • 30g butter
  • 2 shallots, finely chopped
  • 1cm cinnamon stick
  • 1 green cardamon pod, bruised
  • 1 bay leaf
  • 2 cups (500ml) chicken stock
  • 3 strands saffron
  • lemon zest
  • coriander chopped (optional)

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Saute shallots in butter. Add rice and saute on low heat until rice is glassy. Add cinnamon, bay leaf and cardamon. Pour in chicken stock, bring to boil then set to lowest setting. Add saffron, and cover with a lid.
  2. Leave for 15 minutes. Turn off heat and stir through lemon zest and chopped coriander.
