Smoked Salmon and Lemony Fennel

    So simple and easy. The crunchy lemony fennel, yum..... You just need to marinade the fennel for a several minutes. Great for appetiser with a glass of champagne or a glass of white.

    Serves: 3 

    • 6 slices (100-120g) Tasmanian smoked salmon
    • chopped dill, to garnish
    • extra virgin olive oil
    • 250g baby fennel, green top parts removed, thinly sliced
    • 1/4 tsp chopped fennel leaves
    • juice of 1/2 lemon
    • a pinch salt
    • a pinch black pepper powder

    Preparation:5min  ›  Extra time:6min marinating  ›  Ready in:11min 

    1. In a medium bowl, combine sliced fennel, fennel leaves, lemon juice, salt and pepper together by using hand. Leave it for 5-6 minutes to marinade, until the fennel is slightly softened.
    2. Arrange smoked salmon slices on each plate, lemony fennel on top or side. Sprinkle some chopped dill and drizzle some extra virgin olive oil.Serve.
