SHIHO'S Ham & Mashed Potato Salad

    This is a Japanese classic dish that everybody loves, casual, home-style cooking. It reminds me of home, deli and casual dining where I used go to.When I miss Japanese food, this is one of my recipe that I would cook at home.

    Serves: 3 

    • 300g potato, cut into cubes
    • 50g cucumber, seeds removed, small diced
    • 20g carrot, finely julienned
    • 40g red onion, finely sliced
    • 20g leg ham, finely sliced
    • 1/2 tsp salt
    • a pinch black pepper powder
    • 1&1/2 tsp caster sugar
    • 3 tbs japanese mayo

    Preparation:8min  ›  Cook:18min  ›  Extra time:30min cooling  ›  Ready in:56min 

    1. Boil potatoes in a sauce-pan with a good pinch of salt,medium to medium-high heat, for 12-15mintues or until potatoes are tender. Remove from heat. Drain well. Place the pan back onto a low heat, add potatoes back in; mash it by using potato masher. Remove from heat. Transfer it to a large bowl.Keep it aside to cool.
    2. Once the potatoes are cooled down,add all the other ingredients and combine well.Keep refrigerated until you needed.
    3. Serve with tomato wedges,some salad leaves whatever you like.

    Serving suggestion

    Have it in a sandwich.It's also yum...

    Sounds disgusting - but it is delicious. Used ordinary low fat mayo, but next time, perhaps I might add a dash of white wine vineger. Also, left out the ham and served it with barbecue. Everyone loved it.  -  14 Aug 2013  (Review from Allrecipes UK & Ireland)
