Chicken and Avocado Pizza

    A deliciously different pizza made with avocado spread instead of tomato pizza sauce, then topped with chicken, tomatoes and cheese. Great for a light meal.

    Serves: 4 

    • 2 avocados
    • 1 clove garlic, crushed
    • 1 handfull fresh coriander, chopped
    • 1/2 lime, juiced
    • 1 pinch salt, to taste
    • 4 18cm pizza bases
    • 1 tablespoon olive oil
    • 1/2 cup grated Mozzarella cheese
    • 1 cup diced cooked chicken breast meat
    • 1 cup cherry tomatoes, quartered
    • 1/2 cup grated cheddar cheese

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat the oven to 220 degrees C. If you have a pizza stone, place it in the oven while it preheats.
    2. In a food processor, combine the avocados, garlic and coriander. Puree while adding lime juice and salt to taste. Cover and set aside.
    3. Brush both sides of the bases with olive oil. Spread the avocado mixture thickly over the top of each base, then sprinkle with Mozzarella chesse. Arrange the chicken and tomato on top. Sprinkle with cheddar cheese.
    4. Place pizzas on a baking tray if you do not have a pizza stone. Cook for 10 minutes in the preheated oven.

    Having this for lunch now.. quite nice. I didnt have any cheddar so I had to leave that off and I had used up all my fresh tomatoes, so I used canned.  -  24 Dec 2013
