Apple Streusel Cake

    German recipe for a juicy luscious apple cake with yummy crumble topping. Great with cream or ice cream.

    Makes: 1 cake

    • Cake
    • 100g butter
    • 100g brown sugar
    • 150g flour
    • 50g cornflour
    • 1 tablespoon baking powder
    • 3 eggs
    • 2 tablespoon vanilla sugar
    • 1/2 teaspoon lemon flavour
    • 6 apples (peeled and diced)
    • Crumble
    • 125g butter
    • 125g sugar
    • 150g flour
    • 2 tablespoons vanilla sugar

    Preparation:30min  ›  Cook:45min  ›  Extra time:1hour cooling  ›  Ready in:2hours15min 

    1. Cake: Mix the butter and brown sugar, then add sifted flour, cornflour and baking powder. Finally add the eggs, vanilla and lemon flavour. Spread mixture in a greased spring form (24-26 cm). Spread diced apples over the base in the spring form.
    2. Crumble: Mix butter, sugar, flour and vanilla to crumbles then spread over apples.
    3. Bake 40 to 45 minutes at 160 degrees C (fan forced).

    Really good recipe. I followed the recipe word for word but added a tsp cinnamon to the crumble mix. Incidentally, when making the crumble, i thought it was a little top heavy with the butter, but i trusted the recipe and it was spot on.
