Mix the mix all of the ingredients except the pears, plums, chillies, honey, wine and balsamic in a sealed bag to marinade overnight.
After marinating the duck pieces place the chillies, plums, pears, wine, balsamic and honey in a deep baking tray or casserole dish, then pour the marinade from the bag over the top and place the duck pieces on top of that.
Preheat the oven to 170 degrees and bake for 2 - 2 1/2 hours or until the meat is falling of the bone. Taste the sauce to see if it needs to be seasoned with a little more soy sauce.
Serve with steamed green vegetables. DELISH!
To make the duck skin crispy quickly pan fry the duck, skin-side down, before you place the duck pieces in the oven to bake. If still not crispy enough at the end then crank up the heat to 210 C and blast it for another 15 mins.
