Vegetarian Pasta Sauce

This is a good vegetarian pasta sauce with eggplant, tomatoes, mushrooms and zucchini. Serve over spaghetti and top with grated parmesan cheese.

Serves: 4 

  • 1 onion
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 small eggplant
  • 3 tomatoes
  • 1 (425g) can tomatoes
  • 1 tablespoon Italian herbs
  • 4-6 mushrooms
  • 2 zucchini

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Peel onion and garlic, wash other vegetables and chop into about 2cm cubes.
  2. Heat the oil in a heavy-based saucepan, add the onion and garlic and fry until soft.
  3. Add the eggplant, tomato, canned tomatoes chopped up in their juice, and herbs.
  4. Allow to simmer for 40 minutes, stirring occasionally, then add the chopped mushrooms and zucchini and cook for a further 15 minutes.
