This is a simple recipes for salmon with potatoes and spinach.. You'll spend more time cooking and slicing the potatoes than cooking the salmon.

Serves: 2 

  • 1 tablespoon Herbie's Spices Native BBQ Spice Mix
  • 2 salmon fillets
  • 1 tablespoon butter or oil
  • For serving
  • 2 steamed potatoes, cut into slices
  • 1 cup cooked spinach or silverbeet

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Place the spice mix on a plate and press each piece of salmon, skin side up, into the mix until well coated.
  2. Heat the butter or oil in a pan over moderate heat, then cook the fish for two minutes on each side.
  3. On each plate, make a bed of spinach, then layer the potato slices on top of the spinach.
  4. When the fish is cooked, place it gently on top of the potatoes, skin side down. Serve at once.

Native BBQ Spice Mix

This mix contains spices like coriander seed, akudjura, wattleseed, mountain pepperleaf and lemon myrtle leaves.
