Chicken and Red Lentil Mild Curry

    A yoghurt - based tasty chicken and red lentil curry using a mild curry mix. This curry is good for curry beginners.

    Serves: 4 

    • 2 tablespoons Herbie's Spices Yellow Curry powder
    • 1 tablespoon natural yoghurt
    • 8 drumsticks or 8 mixed chicken pieces
    • 2 onions sliced, divided
    • 2 tablespoons oil or ghee
    • 1 clove garlic, crushed
    • 3 tablespoons red lentils, rinsed
    • 1 red chilli, sliced, seeds removed
    • 1 cup (250ml) water

    1. Stir together the curry mix with the yoghurt.
    2. Rinse the chicken and pat dry, then marinate in curry/yoghurt mix for 30 minutes.
    3. Gently fry one sliced onion in oil until well browned and caramelised. Set aside.
    4. In same pan, heat remaining oil and brown chicken well. Add remaining onion and garlic, cook for 2 minutes, then add lentils, chilli and water.
    5. Simmer about 40 minutes until chicken is cooked and lentils are soft.
    6. Remove lid and reduce a little before serving.

    Yellow Curry Powder

    This curry mix is mild and contains spices like turmeric , coriander seed, paprika, turmeric, cumin, fennel, ginger, cassia, chilli and cardamom.
