Strawberry Gum and Wattleseed Cheesecake

A no-bake cheesecake with a double hit of Australian native spices - wattleseed in the chocolate biscuit base and olida with the cream cheese mix. Decorate the cheese cake with strawberries or passionfruit.

Serves: 8 

  • 10 or 12 plain chocolate biscuits, crushed to make 1 cup fine crumbs
  • 1 teaspoon Herbie's Spices wattleseed, roasted and ground
  • 85g butter, melted
  • 500g cream cheese
  • 250ml light sour cream
  • 3/4 cup caster sugar
  • 1/4 cup orange juice
  • 1 teaspoon Herbie's Spices strawberry gum (olida)
  • 3 teaspoons gelatine dissolved in ¼ cup hot water

Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

  1. Combine biscuit crumbs, wattleseed and melted butter and press into base of a lined 22cm springform pan. Place in freezer to set.
  2. Beat cream cheese, sour cream, sugar, fruit juice, Strawberry Gum and the gelatine mix in a food processor until smooth.
  3. Pour mixture over base and refrigerate one hour, or until set.
