Classic Melting Moments biscuits with mixed spice. These biscuits can be sandwiched together with icing, but we prefer them just as they are. The dough will last up to a week in the fridge.

Makes: 30 biscuits

  • 250g butter
  • 1/3 cup (60g) icing sugar
  • 2 teaspoons mixed spice
  • 1 3/4 cups (220g) plain flour
  • 1/3 cup 30g) cornflour

  1. Preheat oven to 160 degrees C. Beat butter and icing sugar until fluffy and pale.
  2. Sift in the other ingredients and stir to combine. At this stage, the mixture can be wrapped in plastic wrap and kept in the fridge for up to a week.
  3. Make balls by rolling between floured palms, place on baking tray, then press down with a fork until 1cm thick.
  4. Cook at 160 degrees C for 15 minutes or until golden.
