Rub the spice mix generously on to the skin of the chicken pieces. Leaving the skin on helps to keep the chicken flesh moist and tender during cooking, and much of the fattiness of the skin is cooked off on the barbecue.
Cook on a lightly oiled griddle over medium heat for about 15-20 minutes. Chicken is cooked if juices run clear when the thickest part of the chicken is pierced with a metal skewer.
Serve with char-grilled sliced Mediterranean vegetables and a Spanish-style salad with lots of onion and black olives.
