    This tuna is seared briefly and served with this sauce made of a chilli spice, lime soy sauce and vinegar. Its like a cross between sashimi and cooked fish.

    Ingredients
    Serves: 6 

    • 500-600g quality raw tuna fillet
    • 4 teaspoons Herbie's Spices Shichimi Togarashi
    • 2 teaspoons sesame oil
    • 4 tablespoons light soy sauce
    • 4 tablespoons lime juice
    • 2 teaspoons rice wine vinegar
    • pickled red ginger, to serve

    Directions

    1. Roll tuna in Shichimi Togarashi. Mix sesame oil, soy, lime juice and vinegar then set aside.
    2. Heat a non-stick pan and sear tuna on all sides for 1-2 minutes each side, remove from heat.
    3. With a very sharp knife, slice into 16 thin slices.
    4. Arrange tuna in center of plate, pour over dressing and garnish with pickled ginger.

    Shichimi Togarashi

    Shichimi Togarashi is a spice mix with spices like chilli, white poppy seeds, unhulled golden sesame seeds, black sesame seeds, orange peel, brown mustard seeds, Szechuan pepper and lemon myrtle.

    Can be Entree or Main

    If serving as a main course, serve with soba noodles, cooked and drained.
