- Roll tuna in Shichimi Togarashi. Mix sesame oil, soy, lime juice and vinegar then set aside.
- Heat a non-stick pan and sear tuna on all sides for 1-2 minutes each side, remove from heat.
- With a very sharp knife, slice into 16 thin slices.
- Arrange tuna in center of plate, pour over dressing and garnish with pickled ginger.
Shichimi Togarashi is a spice mix with spices like chilli, white poppy seeds, unhulled golden sesame seeds, black sesame seeds, orange peel, brown mustard seeds, Szechuan pepper and lemon myrtle.

If serving as a main course, serve with soba noodles, cooked and drained.
