Quick Tomato Kasundi

    This is an easy version of the Bengali classic tomato side dish, Kasundi. Its great to serve with any Indian dishes as well as with lamb cutlets and kebabs or pan fried fish.

    Makes: 300 ml of Kasundi

    • 1 tablespoon vegetable oil
    • 2 teaspoons Herbie's Spices South Indian Seafood Masala (divided)
    • 1 cup chopped tinned tomatoes
    • 2 teaspoons brown sugar
    • 1 teaspoon salt or to taste
    • pinch chilli powder

    1. Heat oil in medium saucepan and add 1 teaspoon of the masala.Fry gently for one minute, being careful not to burn spices.
    2. Add tomatoes, sugar and salt, and heat until bubbling. Lower heat.
    3. Add remaining 1 teaspoon of spice mix and chilli powder, and stir, mashing with a wooden spoon until liquid is reduced and tomato pieces become pulpy.
    4. Add a squeeze of lemon if desired.

    Seafood Masala Spice

    This spice is a mix of spices like pepper, brown mustard, cumin, garlic, turmeric, onion and curry leaves.
