French Potato Omelette

    A simple French omelette with potatoes and bacon (or ham) and cheese. Perfect for breakfast or lunch.

    Serves: 2 

    • 2 medium-large potatoes
    • 1 tablespoon butter
    • 1 teaspoon Herbie's Spices Thyme Leaves Rubbed
    • 100g bacon or ham
    • 5 large eggs
    • 2 tablespoons vintage cheddar

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Peel the potatoes and cut into 1 cm cubes.
    2. Melt the butter in a nonstick pan, add the potatoes and thyme and cook, stirring, for 2 minutes or until lightly browned.
    3. Cover the pan and cook over very low heat for about 15 minutes, stirring occasionally, until they are tender.
    4. Chop the ham or bacon into small pieces and stir in - cook for a further two minutes.
    5. Beat the eggs with a fork or whisk, add salt and pepper.
    6. Pour the eggs over the potatoes and stir briefly. Cover and cook the omelette over low heat for 3 minutes or until the bottom is just set.
    7. Turn and cook the other side. Once it is turned, sprinkle the cheese over.
    8. When the omelette is cooked, slide onto a plate and serve immediately.

    Well I'll start by saying it's delicious. Really delcious...but not super pretty as it's written. Mine had too much filling so the egg didn't quite make it all to the bottom of the pan to make the outside. I would suggest after the potatoes and bacon are cooked, slide them out into a bowl before the egg goes in, then sprinkle maybe half back in to cook with the egg, then flip and put the rest on one half...then when the other side is done cooking, fold it over so that you have some loose filling in the omelete. All in all delicious, just a little too much of a good thing  -  17 May 2013
