    An easy and rich-tasting gingerbread loaf. Beautifully spiced and specially sweetened by golden syrup and treacle. Morning tea ready!

    Ingredients
    Makes: 1 loaf

    • 1 1/2 cups (155g) self-raising flour
    • 3/4 tablespoon Herbie's Spices Ground Ginger
    • 1/2 teaspoon Herbie's Spices Quatre Epices (sweet)
    • 1/2 cup (90g) raw sugar
    • 100g butter
    • 100g treacle
    • 175g golden syrup
    • 1 egg white
    • 150ml milk

    Directions
    Preparation:10min  ›  Cook:45min  ›  Extra time:55min  ›  Ready in:1hour50min 

    1. Preheat oven to 180 degrees C (170 degrees C fan-forced) and grease a loaf tin.
    2. Sift the flour and spices into a large bowl.
    3. Melt sugar, butter, treacle and golden syrup until sugar is dissolved.
    4. Beat egg white with milk for 1 minute, then combine all ingredients to make a smooth batter.
    5. Pour into the prepared tin and bake for 45 minutes or until cooked.
    6. Cool on a rack.

    Quatre Epices

    ...is a traditional european spice blend for cooking containing allspice, nutmeg, cloves and cinnamon.

    Storage

    Keep in an airtight container once completely cooled.

    Made this for Xmas morning tea at work today. Disappeared in 5 minutes flat! Quatre Epices can be switched with mixed spice if you don't have it - 04 Dec 2012
