The best and simplest thing to do with corn when it's fresh and everywhere. Corn is doused in lime juice and Mexican spices, cooked under the grill then rolled in fresh Parmesan.

Serves: 8 

  • 4 fresh cobs of corn, halved
  • 1 tablespoon butter, melted
  • 2 limes, quartered
  • 1 tablespoon Herbie's Spices Mexican Spice Blend
  • 2-3 tablespoons freshly grated Parmesan

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Heat up the grill. Brush corn with melted butter.
  2. Grill, turning, until cooked and coloured.
  3. Sprinkle Mexican Spice Blend over the cobs as they cook, and squeeze lime juice over.
  4. Roll in grated parmesan and serve hot.
