Mexican Chilli Mince

    A great Mexican chilli mince with red kidney beans. You however, can use it in tacos, burritos or even just on toast.

    Serves: 4 

    • 1-2 tablespoons oil
    • 1 onion finely chopped
    • 1 clove garlic, crushed or chopped
    • 500g topside mince
    • 2 tablespoons Herbie's Spices Mexican Chilli Powder
    • 2 tablespoons tomato paste
    • 1 can (400g) red kidney beans
    • sea salt to taste

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Heat the oil in a large frypan and add onion and garlic.
    2. Stir occasionally until onion is transparent (about 2 minutes), then add minced beef and all other ingredients.
    3. Mix well, reduce heat to simmer and cover the pan.
    4. Cook for about half and hour, stirring occasionally.

    Additional Tips

    Serve with tacos, burritos or pasta. Leftovers can be served on toast for breakfast, or use as a filling for crepes or jacket potatoes.
