BBQ Greek Vegetables

    Eggplant, zucchini and capsicums coated in oil and Greek Seasoning and cooked on the BBQ - easy prep and great taste.

    Serves: 4 

    • 1 large eggplant
    • 3 large zucchini
    • 2 red capsicums
    • 2-3 teaspoons Herbie's Spices Greek Seasoning
    • olive oil spray

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cut the eggplant and zucchini lengthways into 1cm thick slices.
    2. Cut the capsicums into quarters and remove seeds.
    3. Lay all the vegetables out in a single layer on a chopping board or platter and spray evenly with oil, then sprinkle the Greek Seasoning liberally over them.
    4. Rest for 10-15 minutes, then cook on the barbecue, adding more seasoning and oil to the second side as they cook.
