This medium-heat curry is rich and creamy with coconut and spices .No good for nut allergies but fabulous otherwise.

Serves: 2 

  • 2 tablespoons peanut oil
  • 600g chuck steak trimmed and cubed
  • 2 tablespoons coconut cream
  • 2 tablespoons Herbie's Spices Masaman Curry Powder
  • 1 large potato peeled and cubed
  • 1 cup (250ml) coconut milk
  • 1 cup (250ml) chicken stock
  • 2 tablespoons brown sugar or Herbie's Spices Gula Melaka
  • 1/2 cup (90g) roasted unsalted peanuts

  1. Heat oil, add beef cubes and seal on all sides - remove to plate.
  2. Add coconut cream and curry powder to pan, heat one minute.
  3. Add beef with juices, potato, coconut milk, stock, sugar and peanuts, and simmer, covered, for 90 minutes.
  4. Remove lid and continue to simmer another 30 minutes until meat is tender and sauce is fairly thick.
  5. Serve curry over steamed white rice.
