    This omelette, known as Kookoo-Yeh Sabzi, is excellent eaten for breakfast, lunch or dinner. It has lots of green vegetables and herbs.

    Ingredients
    Serves: 4 

    • 1 bunch parsley and 1 bunch coriander, chopped
    • 1 bunch shallots, chopped
    • 1/4 iceberg lettuce, shredded
    • oil
    • 4 large eggs
    • 1 teaspoon baking soda
    • salt and black pepper
    • 1 tablespoon plain flour
    • 1-2 tablespoons Herbie's Spices Whole Barberry
    • 2 tablespoons crushed walnuts

    Directions

    1. Fry herbs, shallots and lettuce in oil until wilted, then cool.
    2. Beat eggs well, then add baking soda, salt, pepper, flour, barberry and walnuts. Add the herbs, shallots and lettuce and mix well.
    3. Heat more oil in a non-stick pan and pour in the mix, flattening the surface with the back of a spoon, and place a lid on.
    4. Reduce heat and fry for about 10 minutes, until the base is cooked, then cut into half or wedges and flip pieces over and fry for a further 10 minutes.
    5. Serve warm or cold.

    Dried barberry

    The flavour of these is pleasantly acidic and somewhat fruity. Appreciated for their high citric acid content, barberries are used in Afghan rice dishes and feature in Persian cuisine.
