Remove stem from mushrooms and place a quarter each of the butter, garlic and Berbere in the centre of each mushroom.
Place mushrooms in an ovenproof dish and cover, then bake in 180 degrees C oven for 15-20 minutes (or wrap each one individually in foil and cook on a barbecue).
Make twice the quantity of this recipe so that you have left-overs for a cold lunch the following day. Berbere spice mix is a friend to many vegetables. Try it stir-fried with cabbage, or toss potato wedges in Berbere before roasting.
