    AS either a side or a vegetarian main, once you've tasted mushrooms cooked this way, we guarantee you'll want these spiced-up mushrooms again and again. These can also be cooked on the BBQ.

    Ingredients
    Serves: 4 

    • 4 Portobello or large field mushrooms
    • 2 tablespoons softened butter
    • 1 clove garlic, crushed
    • 2 tablespoons Herbie's Spices, Berbere

    Directions
    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Remove stem from mushrooms and place a quarter each of the butter, garlic and Berbere in the centre of each mushroom.
    2. Place mushrooms in an ovenproof dish and cover, then bake in 180 degrees C oven for 15-20 minutes (or wrap each one individually in foil and cook on a barbecue).

    Additional Tips

    Make twice the quantity of this recipe so that you have left-overs for a cold lunch the following day. Berbere spice mix is a friend to many vegetables. Try it stir-fried with cabbage, or toss potato wedges in Berbere before roasting.
