Farmer's Potato Bake
An excellent recipe for a non-creamy potato bake that gets its unique flavour from balsamic vinegar and thyme. Great as a side or vegetarian main.

1 kg desiree potatoes
2 tablespoons olive oil
2 medium onions, cut lengthwise into eights
2 tablespoons balsamic vinegar
1 teaspoon Herbie's Spices Rubbed Thyme Leaves
salt to taste
freshly ground black pepper to taste
Herbie's Spices Paprika Smoked - Sweet, to garnish

Preheat the oven to 220 degrees C. Wash the potatoes and cut into 3cm chunks.
Put the oil into a large, shallow baking dish. Add the potatoes and onions, then cover tightly with foil.
Bake in the oven for about 45 minutes.
Remove the dish from the oven, take off the foil and sprinkle the balsamic vinegar evenly over the potatoes. Scatter with thyme. Season with salt and plenty of pepper.
Increase the oven temperature to very hot and cook uncovered for a further 30-40 minutes, or until the potatoes are tender and slightly crisp and golden on the edges.
Sprinkle with the smoked paprika before serving. Note

This potato recipe was GREAT! What a nice change with the addition of balsamic vinegar. It was just the right amount. The thyme also added a wonderful layer of flavor. I'd definitely make this one again. I did keep the temperature of the oven the same throughout, and the second roasting without lid took about 30 minutes.

I am querying the temperature as it says to start off with 220c then to turn up high. 220c is very high and my oven stops at 250c. Is the temperature correct?
