An excellent recipe for a non-creamy potato bake that gets its unique flavour from balsamic vinegar and thyme. Great as a side or vegetarian main.
This delicious and easy recipe was given to us by our friend Maureen Simpson, and published in her book, Comfort Food. It's a great accompaniment to roast chicken or beef.
This potato recipe was GREAT! What a nice change with the addition of balsamic vinegar. It was just the right amount. The thyme also added a wonderful layer of flavor. I'd definitely make this one again. I did keep the temperature of the oven the same throughout, and the second roasting without lid took about 30 minutes. - 09 May 2013
I am querying the temperature as it says to start off with 220c then to turn up high. 220c is very high and my oven stops at 250c. Is the temperature correct? - 04 Mar 2013
