First make a basic mayonnaise by whisking together the first four ingredients. Whisking constantly, add 100ml olive oil, 15ml (about a tablespoon) at a time, incorporating each addition before adding the next. Add another 100ml, in a slow steady stream, while still whisking.
For each three tablespoons mayonnaise, add three teaspoons Herbie's Spices Salted Capers, rinsed and dried and chopped, and 3 teaspoons chopped cornichons, and 1 teaspoon finely chopped parsley.
