Trim the fillets and cut each one in half. Sprinkle both sides of the chicken pieces with Cajun seasoning, placing in a covered container to refrigerate overnight.
Heat barbecue hotplate and cook for approximately 5 minutes each side. Actual time will depend on the size of the chicken pieces and the heat of your barbecue.
Pile cooked chicken onto a serving platter, decorate with a few sprigs of fresh continental parsley, and serve immediately.
