BBQ Cajun Chicken Thigh Fillets

    This is such an easy barbecue recipe for a crowd, we've given it to you in large quantities! Give the fillets a few bashes with a mallet to make them a more uniform thickness, if you like.

    Serves: 60 

    • 30 boned chicken thigh fillets
    • 3 tablespoons Herbie's Spices Cajun Spice Mix
    • fresh continental parsley, for serving

    Preparation:30min  ›  Cook:30min  ›  Extra time:8hours marinating  ›  Ready in:9hours 

    1. Trim the fillets and cut each one in half. Sprinkle both sides of the chicken pieces with Cajun seasoning, placing in a covered container to refrigerate overnight.
    2. Heat barbecue hotplate and cook for approximately 5 minutes each side. Actual time will depend on the size of the chicken pieces and the heat of your barbecue.
    3. Pile cooked chicken onto a serving platter, decorate with a few sprigs of fresh continental parsley, and serve immediately.

    Additional Tips

    There are lots of Herbie's Spices blends that can be used in this way. You might like to try any of the following instead of the Cajun spice used in the recipe: Smokey Barbecue Spice; Italian Seasoning; Balmain & Rozelle Spice; Tasty Meat Sprinkle; Berbere; or Chermoula.
