Italian Chicken Skewers

    Kids love things on sticks, so this is a good recipe for introducing them to cooking. If you're too hungry to wait, you can cook these pieces of chicken in a pan without putting them on skewers first. This can be served for a light meal, or as a finger food snack. The chicken skewers are also delicious to take on a picnic and serve cold.

    Makes: 12 skewers

    • 12 bamboo skewers
    • 12 chicken breast tenderloins
    • 2 tablespoons Herbie's Spices Italian Seasoning
    • 2 cups baby salad leaves
    • 1 tablespoon Herbie's Spices Toasted Sesame Seeds (optional)

    1. Soak the skewers in water for at least 30 minutes.
    2. At the same time, sprinkle the chicken pieces with the Italian Seasoning on both sides, cover and leave to stand in the refrigerator while the skewers are soaking.
    3. Push a skewer into the tenderloin from the narrow end and up through the whole length, so that it looks a bit like a paddle pop.
    4. Heat a grill or barbecue and cook the tenderloins about three minutes on each side. Use tongs when you're turning them over because even though the soaked skewer does not burn, it will be too hot to touch.
    5. Wash the salad leaves well in a dish of cold water, then shake the excess water away, let drain for a couple of minutes.
    6. Arrange the leaves on a serving plate, and place the skewers on top. Sprinkle the toasted sesame seeds over.
