An easy peanut sauce makes these perfect for snack or party finger-food food. Also good with steamed rice and sliced cucumber as a meal.

Serves: 2 

  • 3 tablespoons Herbie's Spices Satay Spice Blend
  • 1/2 tablespoon peanut oil
  • 1/2 tablespoon Herbie's Spices Gula Melaka or brown sugar
  • 6 tablespoons crunchy peanut butter
  • 2 chicken breasts
  • 1 Lebanese cucumber, sliced thinly lengthways

  1. Soak bamboo skewers in water for at least an hour or lightly oil metal skewers.
  2. Follow directions on the satay spice pack to make satay sauce. Set aside.
  3. Cut chicken breasts in half lengthways, then into cubes and string onto skewers and coat with a little olive oil.
  4. Cook chicken on the grill or barbecue and serve on a bed of cucumber strips and topped with satay sauce.

Other uses for Satay Spice Blend

Other ideas for Satay seasoning: - mix with seared cubes of lamb and use as pie filling; top a beef burger with satay sauce, cucumber and onion; make Gado Gado Indonesian salad, topped with satay sauce and a poached egg.
