    Rabbit cooked with juniper berries and thyme in a French-style dish. You can also make this dish using chicken thighs.

    Ingredients
    Serves: 4 

    • 1 rabbit, jointed (or 500g chicken thighs)
    • 4 tablespoons olive oil
    • 12 Herbie's Spices Juniper Berries
    • 8 rashers bacon
    • 2 teaspoons Herbie's Spices Thyme Leaves, Rubbed
    • 2 cloves garlic, chopped
    • 1 tin chopped tomatoes

    1. Put rabbit or chicken into a dish with oil and berries and marinate 3-4 hours.
    2. Heat oven to 180 degrees C. Remove joints from marinade.
    3. Lay the bacon rashers singly and place a piece of rabbit or chicken on each one, sprinkle with thyme, garlic and freshly-ground black pepper, and wrap bacon around.
    4. Pour the tomatoes into an ovenproof dish, place the parcels in a single layer and pour the marinade over.
    5. Roast in the oven for 45-60 minutes, basting once or twice. Cooking time will depend on your oven.

    Additional Tips

    Buy farmed rabbit, not wild, as it's more tender.
