    Fish cooked this way tastes amazing but with minimum effort - so it can be a fast weeknight dinner or perfect for a dinner party.

    Serves: 2 

    • 1-2 tablespoons Herbie's Spices Cajun Spice Mix
    • 2 fillets of a firm-fleshed fish such as ling
    • 2 tablespoons butter

    Preparation:5min  ›  Cook:7min  ›  Ready in:12min 

    1. Sprinkle the Cajun Spice Mix over both sides of the fillets, patting on firmly so that they are well coated.
    2. Heat the butter in a heavy-based pan - it needs to be hot, as the burning butter is part of the colouring and flavouring effect of Cajun.
    3. Cook the fish over moderate heat until done and serve immediately.


    This works equally well with chicken breast fillets.
