Pepper Steak Sandwich

    The closest you'll get to a gourmet steak sandwich - pepper-fried steaks with roasted tomatoes, baby spinach and a mustard-lime mayonnaise. Roast the tomatoes beforehand in the oven or under the grill.

    Serves: 4 

    • 4 eye fillet or scotch fillet steaks
    • 2 tablespoons Herbie's Spices Bushman's Pepper Pot
    • 1/4 teaspoon Dijon mustard
    • zest and juice of 1 large lime
    • 200ml mayonnaise
    • 50g rocket or baby spinach leaves
    • 2 long or 4 short ciabatta or similar bread
    • 16 slow-roasted tomato halves

    1. Mix mustard with lime and mayonnaise. Wash and pick stems of salad leaves. Halve and grill ciabatta loaves.
    2. Coat steaks in Bushman's Pepper Pot and heat a griddle or frypan.
    3. Cook steaks for 2 1/2 minutes each side (for medium rare-longer if you like it cooked more) and allow to rest for 3 minutes.
    4. Spread mayonnaise on bread, top with tomato halves, steak and rocket and close sandwiches.

    This spice is a blend of different peppercorns, mustard seeds, coriander seeds, lemon myrtle and other spices.

    This is amazing! The lime and pepper flavours are beautiful together! Even my husband who isn't a huge fan of steak, loved this. I didn't use the bushmans pepper pot, just rubbed the steak with salt and pepper.  -  01 Nov 2010
