Easy Seared Kangaroo Fillet

This is an easy but tasty way to cook kangaroo. The fillet is seared and sliced then served over mashed potatoes.

Serves: 2 

  • 1 tablespoon Herbie's Spices Native BBQ Spice Mix
  • 1 kangaroo loin fillet
  • 1 tablespoon chicken stock or water
  • Herbie's Spices Sea Salt, ground, to taste
  • creamy mashed potato, to serve

  1. Sprinkle half a tablespoon of spice mix over the meat, on all sides, pressing on firmly. The moisture in the meat will make the spices stick.
  2. Heat a tablespoon of olive oil in a pan and cook the kangaroo fillets until sealed on each side. Reduce heat, cover, and cook 3-4 minutes until rare in the centre.
  3. Remove to a warm plate (it will continue cooking until medium-rare in the middle) and deglaze the pan with one tablespoon water or chicken stock.
  4. Slice kangaroo fillets diagonally into 1cm thick slices, serve over creamy mashed potatoes and spoon the pan juices over.
