This is a simple chicken casserole with a special North African flavour. You can add additional vegetables to this dish if desired.

Serves: 4 

  • 500g chicken thigh fillets, boned and trimmed
  • 2 tablespoons Herbie's Spices Berbere Spice
  • 1 tablespoon cooking oil
  • 1 onion finely chopped
  • 1 clove garlic, crushed
  • 1 tablespoon tomato paste
  • 2 carrots halved lengthwise and cut into 2cm pieces
  • water

Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

  1. Roll the pieces of chicken in Berbere.
  2. Heat oil in casserole dish, fry onions until clear and add garlic.
  3. Add coated chicken, brown then add tomato paste, carrots (additional vegetables) and add enough water to cover.
  4. Transfer to the oven at 150 degrees C for half an hour or until the chicken and vegetables are cooked.

Additional Tips

Serve with a sweet potato mash, rice or any other carbohydrate to soak up the gravy. Berbere spice mix is blend of cumin, coriander, fenugreek , allspice, chilli and other spices. It's used in African dishes.
