Easy prawns on the barbie- good for parties, snacks or dinner. Balmain and Rozelle Spice mix is a truly unique spice blend with lemony overtones and a hint of chilli, and it certainly gives a zing to all kinds of seafood.

Makes: 12 skewers

  • 12 jumbo prawns, uncooked
  • 1 1/2 tablespoons Herbie's Spices Balmain and Rozelle spice mix

  1. Soak twelve bamboo skewers for an hour.
  2. Peel the prawns, removing heads and shells but leaving tails intact. Place the peeled prawns in a shallow dish and sprinkle the spice mix over.
  3. Toss and turn the prawns until they are evenly coated; ush a skewer lengthwise through each prawn.
  4. Spray prawns with oil or brush barbecue well with oil.
  5. Cook on a hot barby, turning once or twice.
