Basil Seed Drink

    5 minutes

You'll know this drink if you've lived or travelled in Asia. Basil seeds swell and become glutinous when wet, giving this drink a consistency something like watermelon.

    1. Mix the water, sugar and honey together until sugar has dissolved. This is quicker if you use warm water.
    2. Add the basil seeds and let stand for two or three minutes until they have developed their jelly-like consistency. Serve immediately.

    Additional Tips

Although this drink is something of an acquired taste, it's certainly worth a try. You can add a little coconut milk if you wish.
