Simple and quick, this trout and asparagus easy salad makes a special lunch or easy summer dinner. Delicious!

Serves: 6 

  • 4 trout fillets
  • 1 tablspoon Herbie's Spices Aussie Fish Seasoning
  • olive oil
  • 1 bunch asparagus, trimmed
  • 1 tablespoon green olives, chopped
  • handful of mixed leaves
  • white wine vinegar and lemon juice, to serve
  • 1 tablespoon flaked almonds, to serve

  1. Coat the trout fillets in Aussie fish seasoning.
  2. Cook in a hot pan for 3 minutes each side and set aside.
  3. Meanwhile, boil asparagus until just tender, drain and rinse with cold water.
  4. Mix asparagus, olives and mixed leaves in a large bowl and dress with white wine vinegar and lemon juice.
  5. Flake the trout fillets gently into the salad.
  6. Serve with a sprinkle of flaked almonds.
