Warm Seafood Salad with Asparagus

    A simple seafood salad of prawns, scallops, asparagus olives and spices is delicious without being overpowering and super simple to make.

    Serves: 6 

    • 6 king prawns, uncooked, peeled with tail intact
    • 6-8 Tasmanian scallops
    • 1 tablespoon Herbie's Spices Aussie Fish Seasoning
    • olive oil
    • 1 bunch asparagus, trimmed
    • 1 tablespoon green olives, chopped
    • 1 tablespoon fresh dill tips
    • handful of mixed leaves
    • white vinegar and lemon juice, to serve
    • 1 tablespoon flaked almonds, to serve

    1. Coat the seafood in the Aussie fish seasoning.
    2. Cook in a hot pan or grill for 2 minutes each side (or until just cooked through) and set aside.
    3. Meanwhile, boil asparagus for a couple of minutes until just tender, drain and rinse with cold water.
    4. Mix asparagus, olives, dill tips and mixed leaves in a large bowl and dress with white wine vinegar and lemon juice.
    5. Toss the scallops and prawns gently into the salad.
    6. Serve with a sprinkle of flaked almonds.
