This is a simple stir-fry style meal that is full of flavour and simply delicious. Quick, too - you can whip it up while your rice is cooking!

Serves: 4 

  • 1 tablespoon cooking oil
  • 1 small onion, finely chopped
  • 1/2 each red, green and yellow capsicums, peeled and chopped
  • 1 teaspoon Herbie's Spices Jamaican Jerk Seasoning
  • 1 can chopped tomatoes
  • 16 large green prawns, peeled, or 16 scallops

Preparation:15min  ›  Cook:8min  ›  Ready in:23min 

  1. Heat oil.
  2. Cook onion and capsicum until soft.
  3. Stir in jerk seasoning, tomatoes and prawns.
  4. Cook until prawns are just done (about 2-3 minutes).
  5. Serve with fluffy white rice and garnish with fresh coriander leaves.

Additional Tips

Prepare fluffy white rice in advance.
