Quick Chilled Beetroot Soup

A super quick and easy borscht-type of soup, made using precooked beetroot. Serve with a dollop of sour cream.


Serves: 4 

  • 300g sour cream
  • 2 tablespoons lemon juice
  • 1/2 small onion
  • 185g cooked beetroot
  • crushed ice

Preparation:5min  ›  Ready in:5min 

  1. Place sour cream, lemon juice, onion and beetroot into a food processor or blender and purée until mixture is smooth.
  2. Add ice or cold water to desired consistency, chill and serve with a dollop of sour cream on top.


Use light sour cream to lose some of the fat and calories.
