Spinach Rolls

    Like mini sausage rolls but made with a spinach and feta filling. I used frozen spinach cos it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted would do the job.

    Makes: 36 mini spinach rolls

    • 1-2 cloves garlic, finely chopped
    • oil for frying
    • 250g frozen spinach, thawed in a colander
    • salt to taste
    • 100g feta
    • 3 sheets puff pastry, thawed
    • 1 egg, mixed with about a tablespoon of milk, for brushing
    • sesame seeds for sprinkling

    1. Fry garlic in about 2 tablespoons of oil for just a couple of minutes. Stir in spinach, cook till warmed through and season with salt. Mix well then put all the contents in a bowl.
    2. Preheat oven to 200 degrees C. Lay out one sheet of puff pastry on a breadboard. Cut in half lengthways. Roll out a little if needed - with a rolling pin - so you have enough width to fold it twice lengthways.
    3. Spread one-sixth of your filling down the length of the centre of the pastry. Roll one side over, brush the other side with egg and milk mix, then roll over again to seal. Brush the top of the roll with the egg/milk mix; sprinkle with sesame seeds if you want. Cut into six mini rolls. Repeat for the other half sheet of pastry.
    4. Repeat this for the other two sheets of pastry. Place all the mini rolls onto a greased baking tray and bake in preheated oven for 20-25 mins.

    Something else. The recipe tells me I need fetta cheese for it. What it doesn't tell me is when do I use this fetta. HELP!  -  05 Jul 2011

    These were a great change to spinach triangles that use filo pastry. You add the feta, crumbled, to the spinach when you add the cooked ingredients to the bowl.  -  27 Jan 2012
