    Low fat put everything in at once, no-fuss recipe.

    Serves: 6 

    • 1 1/2 kg chicken on bones legs, wings or pieces
    • 1 large tin (800g) tomatoes
    • 2 red and 1 green capsicums
    • 2 large sliced brown onions
    • 1 cup pitted black olives
    • pepper to taste

    Preparation:10min  ›  Cook:1hour  ›  Extra time:5min  ›  Ready in:1hour15min 

    1. Slice capsicums in half, remove seeds and pith, slice into strips (not too thin.)
    2. Peel, halve and slice onions any way you like.
    3. To a large pan with a snug fitting lid, add all ingredients except the olives.
    4. Simmer until chicken is loose on the bone, adjust seasoning and add olives.
    5. Heat through till olives are hot, serve on rice or pasta or alone.

    Make ahead

    You can add veggies like carrot, zucchini etc. if you want a change. Also great for the Slow Cooker.
