Tomato and Garlic Bruschetta

This is a very quick and effective entree or snack. You can make as many variations as your imagination allows. I use olive oil infused with cooked capsicums.


Serves: 6 

  • 6 slices of your favourite bread
  • 2 large tomatoes
  • 2 tablespoons olive oil, approx
  • 2 cloves of garlic
  • olive oil
  • handful of basil or parsley, torn
  • salt and pepper to taste

Preparation:6min  ›  Extra time:9min  ›  Ready in:15min 

  1. Finely chop tomatoes and place in a bowl, add enough olive oil to just cover tomatoes. Add the basil or parsley stir it all together then add salt and pepper to taste.
  2. Toast the bread then rub each slice with the garlic - on one side only.
  3. Add tomato mixture to each slice of toast - the side infused with garlic - and serve. Voila!

simple yet superb! I made this for a party, made the salsa part the day before, the flavours intensified over night. Then it was very easy just to top the bread with the salsa and grill. Everyone loved it. I lightly sprinkled a tiny bit of grated cheese on them too before grilling! Yum yum. - 01 Oct 2011
