Split Pea and Vegetable Soup

This simple but effective soup uses the traditional ingredient profile of onion and celery with the slight twist of curry powder.

Serves: 6 

  • 1 tablespoon extra virgin olive oil
  • 1 carrot, diced
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 teaspoon curry powder
  • 200g yellow split peas
  • 1 litre water
  • 1 teaspoon salt

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Heat olive oil in a large saucepan. Saute carrot, onion, celery and curry for about 5 minutes. Add the water, peas and salt.
  2. Simmer stirring occasionally for 45 to 50 minutes or until very thick. Serve warm.
