Garlic Lime Chicken

    Pan fried chicken with the assertive flavours of garlic, lime and coriander. You can add a little fresh minced chilli if you like heat.

    • 3 tablespoons olive oil
    • 5 skinless, boneless chicken breast fillets, cut into bite-size pieces
    • 2 cloves garlic
    • 1/2 lime, juiced
    • handful chopped fresh coriander
    • salt and pepper to taste

    1. Heat the oil in a large frying pan over medium heat. Add chicken and brown on all sides. Add the garlic, and cook until the chicken is no longer pink in the middle. Stir in the lime juice and coriander, and season with salt and pepper. Cook just until heated through. Remove garlic from pan. Serve chicken with rice and vegetables.

    Altered ingredient amounts. This was just great - a simple yet tasty dish that the whole family enjoyed. Because there are so few ingredients, I was expecting a somewhat bland meal, but the combination of coriander and lime juice really eliminated the need for any other spices. I used quite a bit more garlic than the recipe called for (we're garlic-aholics!), and used pre-cut chicken strips for a super quick meal. Definitely a meal we'll have again and again!  -  29 Sep 2008


    Used different ingredients. This was a good recipe. The second time I made it I doubled the garlic and caramelized the lime so I could drizzle it over the chichen just before serving. To caramelize the lime: remove chicken from frypan and add approximately 2 tablespoons sugar and the lime juice. (I used 4 tablespoons lime juice.) Heat at medium, while stirring until sugar has dissolved. Then raise the heat and allow to bubble for 2 minutes. Yum!  -  29 Sep 2008


    Juicy and tasty! Incredibly easy to prepare. As per the rest, I upped the garlic. Also added honey for a little sweetness.  -  14 Dec 2009
