This is an excellent pineapple cake with lots of yummy extras like coconut and walnuts. The cream cheese in the icing creates a whole new level of decadence.


Serves: 24 

  • 2 cups (250g) plain flour
  • 1 1/2 cups (375g) white sugar
  • 2 eggs
  • 2 teaspoons bicarbonate of soda
  • 625g crushed pineapple, with juice
  • 250g flaked coconut
  • 1 cup diced walnuts
  • Icing
  • 65g butter
  • 250g cream cheese
  • 3 cups icing sugar

  1. Preheat oven to 180 degrees C. Grease and flour a 23x33cm cake tin.
  2. In a medium bowl stir together the flour, sugar and bicarbonate of soda. Add eggs and mix until well blended.
  3. Bake for 30 to 35 minutes in the preheated oven.
  4. Fold in the pineapple, coconut and walnuts. Pour into the prepared pan.
  5. Icing: In a medium bowl beat together the butter and cream cheese. Mix in the icing sugar until smooth. Spread icing over cooled cake.
