Italian Beans and Tomatoes

This is an easy earthy side dish or as a main served with some good crusty bread and a glass of wine. Add grilled vegetables to make a substantial vegetarian meal.


Serves: 8 

  • 800g cannellini beans, drained
  • 1 (400g) tin diced tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, finely diced
  • 1 pinch chilli flakes, to taste
  • 1/4 cup crumbled feta cheese
  • 1/4 cup diced fresh coriander

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. In a medium saucepan combine beans, tomatoes, olive oil, garlic and chilli flakes.
  2. Stir over medium heat until mixture begins to bubble.
  3. Remove from heat and mix in the feta cheese and coriander.
